Description

Genmai, originally popular in the Northeastern Asia, is the Japanese name for green tea blended with brown rice.  Green tea, for its unoxidized character, is straightforward and proud of its prominent freshness. The brown rice, hence, plays the role as a softener, soothes the grassy sharpness, and creates a lovely synergy, making the blend pleasantly smooth and soft, yet still fresh.    

 

Compared to the Japanese way of processing the rice, we stir-bake the rice and get a slightly different roasted-rice flavor.  We do not steam the tea leaves, but follow the conventional Chinese method to pan-stir-fry it.    

Both the green tea and rice are organically grown in Yilan County, famous for the unpolluted clean soil and natural spring water.  The rice is grown in a uniquely eco-friendly organic method taking advantage of symbiosis of rice and ducks. The ducks swimming in the rice field eat the worms, insects and weeds. The farmer can then grow the rice without using pesticide or herbicide.
